Our family went plant-based over 5 years ago. In my previous omnivore life, I enjoyed eggs immensely. I had 30 hens and many of my friends benefited from my egg bounty.
Flash forward, my husband never quite enjoyed eggs. The smell of them, their texture and appearance made him a tad queasy. But we found as a family we did miss sitting down to breakfast so the hunt began.
I scoured the internet for a recipe that would give me the closest taste without being exact. Something only someone who’s gone plant-based will understand. Like you want those nostalgic comfort foods but don’t want to be grossed out. After several attempts, I finally came up with a recipe that worked.
The first step in learning is trial and error. I made lots of errors and had plenty of trials. I tried Margarine, Earth Balance, Coconut Oil, Sunflower Oil, and Olive Oil. I found equal parts of Earth Balance and Extra Virgin Olive Oil was the perfect combination.
The texture is a personal preference but if you don’t mind the extra work you can thinly slice the tofu to mimic omelet looking teggs (tofu/eggs). I find crumbling them into medium size crumbles after pressing and draining gives the best scramble texture.
Lastly, over seasoning isn’t necessary. Think about how you normally season your eggs. The type of salt or pepper you use and the other herbs, spices or vegetables you put in your scramble. Let your taste buds guide you.
Step back in time to when you were in grade school and learned about the 5 senses and how they all work together to create experiences. And food is a symphony of senses. When you go from eggs to teggs you are going to need to recreate that experience.
Turmeric aside from all the “health benefits” it gives a great color to your tofu. It will satisfy your first sense, sight. But remember a little goes a long way, you can always add more if you want a darker yellow color.
Black salt, which is actually more pink in color is called Kala Namak aka “fart salt.” Let’s not pretend that the smell of eggs cooking is the most pleasant of odors. But if you are trying to get that eggy smell this will tick off the sense of smell box.
First of all, this is a super easy and simple recipe. You can change it up and add or take away whatever you want to suit your taste. It’s a wonderful base for building off of.
You can add this to fried rice, recipe in the near future coming for that. Toss it into your potato hash for a kick of eggy flavor. Or simply add some plant-based mayo, mustard, and sweet relish to make the classic egg salad sandwich.
Lastly “real” eggs may not be suitable for your diet or lifestyle. Tofu is a great source of protein and can be used in many more ways then you’d think possible. I bet after you try this it will become a hit in your household too.
